This hand forged Nakiri cleaver style kitchen knife is made from 1084 high carbon steel. I use high carbon steel because it can hold a sharper edge for much longer than standard stainless steels.

The handle is dark Indian Ebony, with highly figured Curly Maple, topped with a polished copper bolster. The wood has been stabilized, meaning it has been infused with a resin that cures like plastic, which makes the wood substantially more durable and waterproof.
